Parmi ceux-ci, les c\u00e9r\u00e9ales, les l\u00e9gumineuses et certains fruits sont les plus abondants et les plus fr\u00e9quents. L\u2019article pr\u00e9sente un choix de travaux exp\u00e9rimentaux relatifs aux effets de la carbonisation sur la d\u00e9formation des graines et des fruits et sur la conservation diff\u00e9rentielle des assemblages carpologiques. Les exp\u00e9rimentations cit\u00e9es ont \u00e9tudi\u00e9 l\u2019influence des param\u00e8tres tels que la temp\u00e9rature, la dur\u00e9e de chauffe, les conditions oxydantes ou r\u00e9ductrices et l\u2019\u00e9tat initial de la semence afin d\u2019observer les modifications de forme et de dimension. Elles ont port\u00e9 sur des caryopses nus ou v\u00eatus de c\u00e9r\u00e9ales, des graines de pois, des pommes ou des p\u00e9pins de raisin sauvages et cultiv\u00e9s. D\u2019autres ont \u00e9tudi\u00e9 la vitesse de destruction des pi\u00e8ces anatomiques de c\u00e9r\u00e9ales m\u00fbres (tiges, rachis des \u00e9pis, enveloppes des \u00e9pillets, caryopses) ou de glands (cupule, p\u00e9ricarpe, cotyl\u00e9dons) et celle de graines d\u2019esp\u00e8ces sauvages et cultiv\u00e9es diff\u00e9rentes selon leur constitution physique et biologique.
